Festive gingerbread flavored overnight oats with a good hit of caffeine to help with your Christmas shopping.
If you’d like to make something festive, but don’t feel like putting in a lot of effort, then this breakfast is for you. It’s also ideal if you’d like to make something Christmas-y, but don’t want to be left with a whole batch of cookies or cakes tempting you all day long.
So, about these overnight oats. As the name indicates, they basically taste like a gingerbread latte in a bowl. Only better, because they’re creamy and you can eat them with a spoon. And you can add an array of fun mix-ins and toppings! Gingerbread granola is an obvious topping, but you could also add (or mix in) dried fruit, nuts, chocolate chips, colorful candies or shredded coconut.
Call me crazy, but I actually love to add a handful of blueberries to these oats (in addition to a giant spoonful of granola, of course).
Just like real gingerbread lattes, these overnight oats are definitely on the spicy side – so you may wish to reduce the spices (especially the ginger) if you’re spice-sensitive.
If you’ve just taken a bite of the overnight oats and think, ‘Yaaahh, too spicy!’, then I have two suggestions for you:
- Top your oats with a large dollop (or two) of yogurt; and/or
- Add more maple syrup.
Seriously, maple syrup solves everything.
This recipe makes two bowls of overnight oats, largely because I like having another breakfast waiting for me in the fridge. However, it would be easy to halve the recipe and just make one.
Oh, and if you’re too cold for overnight oats, then you may wish to try some Gingerbread Oatmeal, Gingerbread Latte Oatmeal, or Gingerbread Baked Oatmeal instead. (Yeah, I really love gingerbread).
Or just enjoy some cold overnight oats with a steaming cup of (festive) coffee.
Fun Fact: Queen Elizabeth I is credited with creating the first gingerbread man. Apparently, she surprised visiting dignitaries by presenting them with gingerbread versions of themselves.
- Overnight oats
- ⅔ cup rolled oats
- 2 teaspoons chia seeds
- ½ teaspoon ground cinnamon
- ½ teaspoons ground ginger
- Pinch of ground cloves
- 1 teaspoon vanilla extract
- ½ teaspoon blackstrap molasses
- ½ cup strong, cold coffee
- 2 tablespoons maple syrup
- 1 cup Greek-style yogurt
Toppings- Gingerbread granola
- Greek-style yogurt
- Maple syrup
- In a bowl or container, combine the rolled oats, chia seeds, cinnamon, ginger, cloves, vanilla extract, blackstrap molasses, coffee and maple syrup. Add the yogurt, and mix until completely combined.
- Cover the bowl with plastic wrap (or put the lid on the container) and leave in the fridge overnight.
- In the morning, stir in a little bit of milk if the overnight oats are too thick. If the oats are not sweet enough, stir in additional maple syrup.
- Divide the oats between two bowls. Top with gingerbread granola, yogurt and a drizzle of maple syrup.
Plain, vanilla, or coffee flavored yogurt should work. If using a sweetened yogurt, you may wish to reduce the maple syrup.
Blackstrap molasses
Blackstrap molasses add a bit of a brown sugar flavor. This ingredient can be replaced by regular molasses, or omitted entirely.
