This breakfast makes me feel like a kid in a candy store.
Here we have M&M’s, chocolate chips and peanut butter in a breakfast that basically tastes like a bowl of cookie dough.
I may technically be an adult, but I still love cookies as much as I did when I was eight years old. Also, we all know that candy stores are really for adults.
First things first: what are Monster Cookies? They’re cookies that haven’t received the fame they deserve, I’ll tell you that. Monster Cookies are essentially peanut butter oatmeal cookies studded with chocolate chips and M&M’s candies. They’re big, chunky, chewy and chocolatey – like the best cookies should be.
As you can undoubtedly tell, I’m a serious fan of Monster Cookies (they’re right up there with my beloved Cowboy Cookies). So it’s pretty surprisingly that this is the first time I’ve posted a Monster Cookie-related recipe.
Not to worry, something tells me I’ll make up for this blog’s lack of Monster Cookies later.
While this is a single-serving recipe, it would be very easy to double, triple or quadruple it if needed. But honestly, there’s something oddly satisfying about making one bowl of cookie dough overnight oats and thinking, ‘Ah-ha! All for me!’
Okay, maybe I’m getting a case of cookie-related insanity. Let’s move on, shall we?
Make sure you use a thick and creamy yogurt for this recipe, or else you won’t end up with that all-important cookie dough texture. Either plain or vanilla-flavored yogurt can be used here. I usually opt for a half-plain, half-vanilla combination.
If possible, try to find a fairly mild yogurt – nothing too sour, and nothing that tastes too much like artificial vanilla flavor (but this is me being very picky).
For purely aesthetic reasons, the recipe calls for the chocolate chips to be stirred into the overnight oats, while the M&M’s candies are simply placed on top.
From experience, I can tell you that if you try to stir M&M’s into overnight oats, they’ll bleed their colors and you’ll end up staring at a psychedelic, swirled rainbow of oats.
Of course, if a swirled rainbow is what you’re after, then by all means, stir away. (Just don’t stir too vigorously, or else everything will meld into an unattractive purple-brown color).
Last of all, if you have a near-empty peanut butter jar handy, then I highly recommend that you make these oats in said jar.
(By the way, I took these photographs months ago, so please don’t be alarmed by the ‘Best By’ date on the peanut butter. Also, a disclosure: I have previously received products from Peanut Butter & Co).
I may have transferred these oats into a bowl for photographic reasons – let’s face it, an open peanut butter jar isn’t the prettiest thing to look at – but the best way to enjoy any kind of peanut butter overnight oats is straight out of a near (or not-so-near) empty nut butter jar.
After all, isn’t that part of the joy of being an ‘adult’: we can buy candy, eat peanut butter out of the jar, and mix the two together.
- Overnight oats
- ⅓ cup rolled oats
- 1 teaspoon chia seeds
- ½ teaspoon vanilla extract
- ¼ teaspoon blackstrap molasses
- ¼ cup milk
- ½ cup Greek-style yogurt
- 2 tablespoons peanut butter
- ½ - 1 tablespoon maple syrup
Toppings- Chocolate chips
- M&M’s candies
- In a bowl or container, combine the rolled oats, chia seeds, vanilla extract, blackstrap molasses and milk. Add the yogurt, and mix until completely combined. Stir in the peanut butter and maple syrup.
- Cover the bowl with plastic wrap (or put the lid on the container) and leave in the fridge overnight.
- In the morning, stir a handful of chocolate chips into the overnight oats. If the oats are too thick, also add a little more milk.
- Top the oats with some extra chocolate chips and M&M’s candies. Enjoy!
Any thick and creamy yogurt can be used for this recipe - it does not need to be authentic Greek yogurt.
Plain or vanilla-flavored yogurt is fine - I used half plain, half vanilla yogurt. If using a sweetened yogurt, you may wish to reduce or omit the maple syrup.
Chocolate chips
The chocolate chips can be added in Step 1, if desired. However, leave the M&Ms until the next morning.
Chia seeds and blackstrap molasses
The chia seeds and/or blackstrap molasses can be omitted.
