A fun breakfast for one: single-serving coffee and peanut butter overnight oats topped with chocolate.

When I first saw a Peanut Butter Latte advertised at a coffee shop, I was skeptical. So skeptical that I bypassed it completely and opted for tea.

That morning my brain was in a spin (as it often is). Peanut butter and coffee: would it work? Obviously peanut butter and chocolate is a beloved combination, but peanut butter and coffee?

Eventually, many weeks later, I finally tried the peanut butter and coffee combo. And you’re probably expecting me to say ‘and it was amazing’. But honestly, it needed something. It needed chocolate. Now a peanut butter latte smothered in chocolate sauce is delicious.

So, naturally, I had to turn it into breakfast.

The base of this breakfast is pretty much what you’d expect: rolled oats, a few chia seeds, yogurt, coffee, vanilla extract, a little maple syrup and (of course) peanut butter.

I mixed up my overnight oats in a near-empty peanut butter jar, which is my favorite way to make sure I get the last bits of peanutty goodness out of my jars. As you can see (in the pictures below), I used Peanut Butter & Co.’s White Chocolate Wonderful, which I highly recommend if you can get your hands on it.

Please note that I have received products from Peanut Butter & Co. in the past, but all opinions are, of course, my own.

The real star of this breakfast is the trio of toppings. There’s (1) chocolate sauce, (2) chocolate chips, and (3) miniature peanut butter cups. Chocolate sauce helps tie the peanut butter and coffee flavors together, while the chocolate chips add texture and extra sweetness.

As for the peanut butter cups… well, they’re really just there for fun.

If you don’t have any store-bought chocolate sauce, I have two DIY versions.

Chocolate Sauce A: the melted chocolate version
  1. Pour 1 tablespoon (15mL) milk into a microwave-safe bowl, and heat it in the microwave for 20 seconds. Add ¼ cup (45g) chocolate chips and stir vigorously until the chocolate has melted
  2. If the chocolate has not completely melted, microwave the bowl for 10 – 20 seconds on a low wattage, and stir well.
Chocolate Sauce B: the easier (but not quite as delicious) version
  1. In a small bowl, whisk together 2 tablespoons (10g) cocoa powder and 2 tablespoons (30mL) maple syrup until smooth. Taste, and increase the maple syrup if necessary. Alternatively, if the mixture is too sweet, whisk in extra cocoa powder.
  2. Whisk in 2 teaspoons (10mL) milk. If the sauce is too thick, whisk in more milk a teaspoon at a time. If the sauce becomes too thin, whisk in extra cocoa powder.

Sometimes I end up making a hybrid of the two versions, depending on how many chocolate chips I have left in the bag.

Peanut Butter Latte Overnight Oats
 
Single-serving coffee and peanut butter overnight oats topped with chocolate sauce, chocolate chips and miniature peanut butter cups.
Recipe type: Overnight Oats
Yield: 1 bowl
Ingredients
  • Overnight oats
  • ⅓ cup rolled oats
  • 1 teaspoon chia seeds
  • ½ teaspoon vanilla extract
  • ⅓ cup cold coffee
  • ⅓ cup Greek-style yogurt
  • 2 tablespoons peanut butter
  • ½ - 1 tablespoon maple syrup

  • Toppings
  • Chocolate sauce
  • Chocolate chips
  • Miniature peanut butter cups
Directions
  1. In a bowl or container, combine the rolled oats, chia seeds, vanilla extract and coffee. Add the yogurt, and mix until completely combined. Stir in the peanut butter and maple syrup.
  2. Cover the bowl with plastic wrap (or put the lid on the container) and leave in the fridge overnight.
  3. In the morning, stir in a little extra milk or yogurt if the overnight oats are too thick.
  4. Top the oats with plenty of chocolate sauce, as well as chocolate chips and miniature peanut butter cups.
Notes
Yogurt
Any thick and creamy yogurt can be used for this recipe - it does not need to be authentic Greek yogurt. Plain or vanilla-flavored yogurt is ideal.

Coffee
Ideally, use a strong coffee - otherwise the peanut butter flavor can mask the 'latte' flavor
