A breakfast banana split for two, filled with healthy overnight oats and topped with chocolate, fruit and nuts.
Back in the summer of 1904, a fellow by the name of David Strickler sliced a banana lengthways, placed three scoops of ice cream between the halves, and topped his creation with marshmallows, pineapple slices, nuts, cherries and syrup.
And voilà: the banana split – or ‘banana split sundae’, as Strickler originally called it – was born.
Not surprisingly, the banana split became a hit in Strickler’s town of Latrobe, Pennsylvania, especially among college students.
However, Wilmington, Ohio, also claims to be the birthplace of the banana split. According to the Ohioan version of events, Ernest R. Hazard invented the grand dessert in 1907. Wilmington even hosts an annual Banana Split Festival.
So we have a serious split rivalry on our hands.
That being said, unless something funky happened, 1904 came before 1907. So, to me, it seems logical to give Pennsylvania the coveted banana split crown.
Since the banana split seems so whimsical and exciting, I simply had to turn it into breakfast.
Actually, I had to turn it into breakfast several times – such as these pancakes, and my single-serving banana split overnight oats. Last year I also baked some banana split muffins, which never ended up on the blog (hmm… I may need to make those again soon).
Today’s recipe is a supercharged version of the original recipe. Unlike the original version, this one has three ‘scoops’ of overnight oats – chocolate, strawberry and vanilla. It also makes two servings, so you’ll need a friend.
Alternatively, overnight oats can be stored in the fridge for a couple of days if you don’t trust any of your friends around chocolatey food.
After the crazy terrifying Republican Convention earlier this week, next week it’s the Democrats’ turn. The Democratic National Convention will be held in Philadelphia, Pennsylvania.
So, if you’re looking for something Pennsylvania-themed (just because themed food is fun), then don’t forget about the not-so-humble banana split.

- Strawberry Overnight Oats
- 3 medium-sized strawberries, chopped
- 3 tablespoons Greek-style vanilla yogurt
- ¼ teaspoon vanilla extract
- ¼ cup rolled oats
Chocolate Overnight Oats- ¼ cup rolled oats
- ¼ cup Greek-style vanilla yogurt
- 2 tablespoons milk of choice
- 2 - 3 teaspoons cocoa powder
- 2 teaspoons maple syrup
- ¼ teaspoon vanilla extract
Vanilla Overnight Oats- ¼ cup rolled oats
- ¼ cup Greek-style vanilla yogurt
- 2 tablespoons milk of choice
- ¼ teaspoon vanilla bean paste
To Assemble- 1 banana
- Chopped strawberries
- Chocolate sauce
- 3 tablespoons Greek-style yogurt
- Chopped peanuts
- Sprinkles
- 3 candied (glacé) cherries
- Strawberry overnight oats: Use a blender (or food processor) to puree the strawberries, yogurt and vanilla extract. Transfer to a small bowl (or container). Add the rolled oats, and mix until well combined.
- Chocolate overnight oats: In a small bowl (or container), mix together the rolled oats, yogurt, milk, cocoa powder, maple syrup and vanilla extract.
- Vanilla overnight oats: In a small bowl (or container), mix together the rolled oats, yogurt, milk and vanilla bean paste.
- Cover the three bowls with plastic wrap (or put the lids on the containers) and leave in the fridge overnight.
- To assemble: In the morning, arrange the strawberry, chocolate and vanilla overnight oats into a row of three ‘scoops’ in a banana split boat (or other bowl or plate).
- Carefully peel and slice the banana in half lengthways, and place each half on either side of the overnight oats scoops. Place some chopped strawberries on either side of the scoops.
- Top each scoop with some chocolate sauce and a dollop of yogurt. Scatter over some chopped peanuts and sprinkles.
- Place a candied cherry on top of the three dollops of yogurt. Grab two spoons, and enjoy!
Pour 1 tablespoon (15mL) milk into a microwave-safe bowl, and heat it in the microwave for 20 seconds. Add ¼ cup (45g) chocolate chips and stir vigorously until the chocolate has melted
If the chocolate has not completely melted, microwave the bowl for 10 – 20 seconds on a low wattage, and stir well.
Yogurt
Any thick and creamy yogurt can be used for this recipe - it does not need to be authentic Greek yogurt (but make sure it's quite thick).
