Blueberry Maple Overnight Oats

Simple, single serving overnight oats with Greek yogurt, cinnamon, blueberries and plenty of maple syrup.

February 28 is Pancake Day (aka Shrove Tuesday, aka Mardi Gras)! But if you don’t have the time to make pancakes on a Tuesday morning, or – perish the thought – don’t like pancakes, then I have a solution for you: overnight oats flavored like blueberry pancakes.

Let’s start with the most important part, the topping. You couldn’t possibly have a stack of blueberry pancakes without maple syrup, right? After all, pancakes aren’t just cakes cooked in a pan – they’re also sponges for soaking up syrup. So it only seemed fitting that these pancake-inspired overnight oats should be topped with an avalanche a drizzle of sweet maple syrup.

Since topping is the main source of sweetness in the recipe, it’s important not to skimp on the syrup!

The overnight oats themselves are flavored with cinnamon, vanilla extract and maple extract (plus the blueberries, of course). If you can’t get your hands on some maple extract, just use more vanilla extract – and again, don’t skimp on the syrup topping.

Other than that, the overnight oats are made with the usual suspects: rolled oats, yogurt, milk and chia seeds. If you don’t have any chia seeds, simply leave them out. And feel free to use any kind of milk – dairy, almond, soy, rice, coconut, goat – it’s all good.

Fun Fact: The town of Olney, Buckinghamshire, England, holds a pancake race every Shrove Tuesday. Apparently this race dates back to 1445.

Blueberry Maple Overnight Oats
 
Overnight oats for one with the classic flavors of blueberry pancakes. Since the maple syrup topping is the main source of sweetness in this breakfast, make sure you don't skimp on the syrup!
Recipe type: Overnight Oats
Yield: 1
Ingredients
  • Overnight oats
  • ⅓ cup rolled oats
  • 1 teaspoon chia seeds
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon maple extract
  • ¼ teaspoon vanilla extract
  • ¼ cup milk
  • ½ cup Greek-style yogurt
  • ¼ cup blueberries

  • Toppings
  • Blueberries
  • Maple syrup
Directions
  1. In a bowl or container, combine the rolled oats, chia seeds, cinnamon, maple extract, vanilla extract and milk. Add the yogurt, and mix until completely combined. Stir in the blueberries.
  2. Cover the bowl with plastic wrap (or put the lid on the container) and leave in the fridge overnight.
  3. In the morning, stir in a little extra milk if the overnight oats are too thick.
  4. Top the oats with blueberries and a generous amount of maple syrup.
Notes
Yogurt
Feel free to use plain, blueberry or vanilla yogurt. If your yogurt is quite sour, you may wish to add a teaspoon or two of maple syrup into the overnight oats (alternatively, make sure you're generous with the maple syrup topping).

Maple extract
If you don’t have any maple extract, use more vanilla extract.

Chia seeds
If you don't have any chia seeds, simply leave them out.
