Key Lime Pie Smoothie Bowl

Key lime pie in a bowl: one thick, green and zesty smoothie topped with granola, almonds and berries.

One of my ongoing, lifelong goals is to discover more and more ways to eat pie for breakfast.

This all started when I was a kid and used to actually eat pie for breakfast. We often had individual apple and berry pies in the freezer, so one day I figured I’d heat one up for breakfast – because, you know, pies taste better than cornflakes. And then the next day I warmed up another pie, and did the same thing the day after that…

It was around that time that my mother made sure we had leftover pasta in the fridge so I could eat that for breakfast instead (because if there’s one thing I love more than pie, it’s pasta).

Ever since then I’ve been looking for more nutritious ways to put some pie in my pie-hole. There’s been pie-inspired oatmeal, baked oatmeal, overnight oats, pancakes, granola, crepesmini bundt cakes… and now a smoothie bowl!

Since I like my smoothie bowls to be easily spoon-able, this one’s quite thick. The ingredients may not look like they’ll blend together at first, but give it some time and they’ll whirl into a smoothie. Of course, if the smoothie is looking too thick for your liking – or the ingredients just won’t blend together – then add some milk or yogurt.

The sweetness in this smoothie bowl comes from a trusty frozen banana. It’s best to wait until you have a banana that’s really ripe, then peel it and freeze it. The riper the banana, the sweeter the fruit. If you find that your smoothie isn’t sweet enough, stir or blend in some maple syrup, honey or sweetener of choice.

Then there’s the color! That bright green color comes courtesy of our good friend spinach. You can’t taste the spinach (it’s well and truly covered by the lime zest and juice), so it’s just there to make your morning more colorful.

And while I’m on the topic of spinach, the theme on the blog for this month is… vegetables and pseudo-vegetables. So expect a few recipes with real vegetables (like spinach and carrots) and kind-of-but-not-really vegetables (such as pumpkin, which is a fruit for some reason).

A single-serving lime smoothie topped with granola, almonds and berries. The smoothie is thick, creamy, and reminiscent of key lime pie!
Recipe type: Smoothies and Drinks
Yield: 1
Ingredients
  • Smoothie
  • 1 frozen banana
  • 1 cup spinach leaves
  • ½ cup Greek-style yogurt
  • 1 tablespoon spreadable cream cheese
  • 2 teaspoons lime zest
  • 1 teaspoon lime juice
  • ½ teaspoon vanilla extract

  • Toppings
  • Granola
  • Almonds
  • Berries
Directions
  1. Blend the frozen banana, spinach leaves, yogurt, cream cheese, lime zest, lime juice and vanilla extract until smooth. For a thinner smoothie, add more yogurt or some milk.
  2. Transfer the smoothie to a bowl.
  3. Top the smoothie bowl with plenty of granola, some almonds and a few berries.
Notes
If the smoothie isn't sweet enough, stir or blend in some maple syrup, honey or sweetener of your choice.
